Bread & Culture is a small-batch bakery whose focus is to offer bread and pastry made with the highest quality ingredients. We proudly use local whole grains and stone-milled flours. Our sourdough bread starts with a 12-hour levain, then mixed, shaped, and cold-proofed for 15 hours.

Who We Are

Paulo is a trained school counselor whose life path reconnected him with food. He is a self-taught baker who has fallen in love with the process of making sourdough bread. When Paulo isn’t baking, he enjoys spending time with his wife, Michelle, and children: Sebastian, Matteo, Penelope, and Kai… and let’s not forget the pup, Shade!

Our History

Bread & Culture is an artisan bakery located on Main Street in Flemington, New Jersey. Our focus is to offer naturally leavened breads that are made with the highest quality grains. All of our baked goods are handcrafted and made on-site. Paulo and Michelle Velasco started Bread & Culture in 2019 as a business that focused on offering goods at local farmers markets.

What We Believe In

Healthy Ingredients

Natural fermentation sourdough supports digestive health and is ultimately more nutritious as it allows our bodies to absorb the fiber and proteins from the grains.

Quality Ingredients

Naturally Leavened bread more commonly known as sourdough is made just as it should be; water, flour and salt.

Giving Back

We are firm believers in supporting local agriculture; buying from local farmers (shaking hands with the person that is growing your grains); supporting the communities where we exist; to collaborate with local networks of people to make it easier for consumers to have access to food.
